Maury, in Cathare country

The wine-growing region Protected on the north by the Corbières range and on the south by the first sharply rising Pyrenean spurs, the vineyard follows a natural corridor 17 km long and 4 km wide.
Near the village of Maury, Quéribus -former Cathare citadel and their last refuge- overlooks a patchwork of black plots huddled next to soaring limestone cliffs. |

Grenache gris |
Vine varieties The main varieties used for red wine are Grenache noir (at least 70%) , Grenache blanc, Grenache gris and Macabeu. Additional varieties: Carignan noir and Syrah. For white wine: Grenache gris and Grenache blanc, Macabeu blanc, Tourbat blanc, Muscat d'Alexandrie and Muscat blanc à petits grains.
A wine waiter's tips... Deep red Maury wines can be left to age over 20 years. Serve chilled as an aperitif with dried fruit. They go well with melon, sweet and sour dishes, goat's cheese and blue-veined cheeses. At dessert time, serve with cakes, icecream, sorbets, and especially dark chocolate.
